From this philosophy was born our concept From Farm to Table, along with a special story: that of Harry, the calf we adopted at the Aignerhof, a farm nestled in the natural beauty of San Martino.

Eine authentische Verbindung zwischen Mensch und Natur.

Unsere Patenschaft für Harry ist nicht nur ein Symbol, sondern ein Engagement, das mit der Zeit wächst.
Céline, seine Patin, besucht ihn regelmäßig auf dem Aignerhof: Einmal im Monat bringt sie ihm Futter, kümmert sich um ihn und begleitet seine Entwicklung aus nächster Nähe.

Jeder Besuch ist ein Moment aufrichtiger Verbundenheit – ein kleines Ritual, das uns daran erinnert, wie wertvoll die Beziehung zwischen Mensch, Tier und Erde ist.
Durch diese Geste wird From Farm to Table zu mehr als nur einer kulinarischen Philosophie: zu einer Lebenshaltung, in der Achtsamkeit und Fürsorge die Grundlage jeder Entscheidung bilden – auch am Tisch.

A Lesson in Harmony

Where life follows its natural rhythm.

Harry grows up alongside his mother, in a truly rare environment. The Aignerhof is one of the few farms that still practices a natural form of breeding, where the calf lives and develops together with its mother.
Every stage of his growth follows the rhythms of nature and respects animal well-being. From Harry, we’ve learned that true harmony is born from care, attention, and the time we dedicate to what is genuine.

Authenticity begins with knowing the people behind the products.
Through our From Farm to Table approach, we work closely with the Aignerhof, Inser Gorten, Fischzucht Schiefer, and Schmiedhof.
Each dish tells their story — one of dedication, craftsmanship, and the unmistakable character of South Tyrol.

 

S for Sustainable

For us, sustainability means taking responsibility — towards nature, animals, and people.
At the Aignerhof, animal welfare is at the heart of everything. Here, we have adopted our calf Harry, a symbol of an ethical and mindful approach to life.
Short supply chains, seasonal ingredients, and fair collaborations create a virtuous circle where pleasure and awareness coexist in harmony.

True flavour is born from simplicity.
In our kitchens, every ingredient takes centre stage: the meat from the Aignerhof, the fish from Fischzucht Schiefer, the strawberries from Schmiedhof, and the fruit from Inser Gorten express their natural essence — enhanced with balance and respect. This is our idea of luxury: naturalness, purity, and authenticity.
